Hanging weight (also called "carcass weight") is what the animal weighs immediately after processing when it's hanging in the cooler before butchering. This includes bones, excess fat, and parts that will be trimmed away during cutting.
Delivered weight is the actual amount of packaged, ready-to-eat meat you take home after all processing, trimming, and packaging is complete. This is the usable meat that goes in your freezer.
Why do you only list delivered weight instead of hanging weight?
We believe in complete transparency about what you're actually receiving. Many farms advertise hanging weight because it sounds like more meat, but hanging weight can be misleading since you don't get to keep the bones, excess fat, and trim that make up 25-35% of the hanging weight.
